5 Recipes You Won’t Know Are Gluten & Dairy Free

This is unusual for me, but I wanted to share a few of my favorite gluten-free & dairy-free recipes that you won’t believe are so delicious you’ll eat them all in one night!  Unusual in the sense that they aren’t my recipes, but some of my favorite people!

I’ve become so good at eating gluten-free & dairy-free that I don’t have any urge to go back to cheese pizza.  Yep.  I love a good oat flour & can don’t even notice the lack of butter or cane sugar or sprinkle of feta cheese.  Wafiq has been tricked so well he doesn’t eat gluten or dairy & hasn’t even realized it. Am I the angel or devil, you decide.

I have a few cult-favorite recipes that are my go-to’s when I’m trying to whip up the perfect meals or dessert & I thought I might as well share them in one place.  I’m not ninja strict at avoiding gluten or dairy, but I make my best effort 90% of the time.  Even if you consume gluten & dairy – I promise you’ll still LOVE these recipes. Trust.

5 Delicious Recipes You Won’t Know Are Gluten & Dairy Free

Chicken Tenders in Nobal Made Buffalo Sauce:

I made this simple recipe up but it’s a cult favorite in my house & something I think you should get rotating on your dinner recipe schedule. Buy yourself Noble Made Buffalo Sauce next time you’re at Whole Foods.  It’s not too spicy, it’s perfect.  Cut boneless/skinless chicken breasts (or cauliflower chunks if your vegan) into tender size pieces.  Marinate the chicken in the sauce, in your fridge, for a few hours.  If you’re in a time crunch, know I’ve marinated for as little as 10 minutes & it still tastes fucking delicious.  Preferably go outside & grill those tenders to perfection.  If grilling isn’t an option, throw them in the oven & bake that way.  Add some sweet potato fries & boom, it’s a meal you can’t believe tasted so good!  They also go great with this basic salad.

The Easiest Chocolate Chunk Oatmeals Cookie by Rachel Mansfield:

OMG I need a minute.  This fucking cookie you guys.  I’m having a loss of words here.  This cookie is the creme of the crop, the cherry on top, the fountain of youth, the gold beneath the rainbow.  This cookie is the ULTIMATE cookie.  The combo of flavors is exceptional & graces your palette better than the expectation you have from a sweet treat.  The dash of cinnamon, the comfort of oats, the decency of chocolate – pure perfection.  If there’s one cookie that you should all get on board with, it’s this one.  Oh!  And they’re gluten-free, dairy-free, egg-free.  WTF.  I’ve experimented with different nut butter & they’ve all been exceptional.  I’d also like to make note, I trust every single recipe Rachel Mansfield creates, I feel confident attempting anything on her site & that says a lot because I don’t consider myself a baker by any means.

One Bowl Honey Oat Bread by Kelli Shallal:

This bread has been my go-to when I know I’m going to have a few busy days ahead of me & at-home cooking is probably going to be limited.  My favorite gluten-free flour is Oat Flour.  I think it bakes the most like real flour & it tastes really good!  I always buy the flour organic because I once heard oats are sprayed especially terrible with chemicals, so no.  Allow me to share: “Some types of oat cereals, oatmeal, granola and snack bars contain higher levels of a chemical found in the weed killer Roundup than what the Environmental Working Group considers safe… Almost three-quarters of food samples tested showed higher glyphosate levels than what the group’s scientists believe to be “protective of children’s health,”” (via).  For that reason, I’ll stick to organic (find it here).  This Honey Oat Bread is thick & a total comfort bread, just slightly sweet & will meet your morning bread goals.

Doughy Chocolate Chip Cookie Pizza by Rachel Mansfield:

When I say Wafiq & I both have one recipe that is our kryptonite, this is it.  This fucking cookie cake is somehow more powerful than both Wafiq & combined.  It has some superpower strengths deep within the comfort of the ingredients.  It melts in your mouth in a way you wouldn’t be able to imagine until it happens, and then you can’t let it go as it’ll linger in your subconscious mind.  There is one stick of butter in this ingredient list BUT I use Mykonos Vegan Butter instead & it works perfectly & I skip the collagen peptides.  You won’t regret making this, unless you have no self-control like myself.

Pumpkin Spice Scones from Dadaeats Instagram:

If you’re craving the fall flavors, these scones are for YOU! You know how much sugar & a whole shit-ton of terrible other ingredients are in the uber delicious pumpkin bread you buy at the store?  A lot.  OMG so much.  Butter, sugar, oil, more sugar, ect.  These scones are a perfect example that you can have the same flavors & comfort of delicious bakery items easily at home without all the junk ingredients.  I used real eggs in the recipe & mixed everything in the one bowl – it works every time!  I wasn’t even sure if I was a major pumpkin person but it looks like I am.  These scones are SO freaking good, you won’t believe it.  Trust.
