If you assume I prefer cooking over baking, you’re 100% correct. I’m the ultimate worst at baking. And don’t think I haven’t tried. Every cookie is flat, every brownie is burnt, and every cake crumbles. Throw in the fact that I’m not a major dessert person, I leave it up to Nothing Bundt Cakes or Hu Chocolate bars & skip baking entirely.
Below are a few recipes I found skimming through Pinterest that I can’t pass up. You didn’t know I’m an avid Pinner? Well well well, I use Pinterest more than google. Although, like almost every form of social media now, you really have to dig deep to get past sponsored or paid pins. Not like the good old days!
As a heads up, whenever I’m looking for recipes there’s a few things I keep in mind:: These days, gluten free & diary free. Preferably extremely easy, without too many ingredients & in a perfect world – no added sugars! The last component, is a recipe that Wafiq will still want to eat after it checks all my boxes. If Wafiq doesn’t help me eat it, I’ll end up eating the entire thing & hate myself afterwards.

Flourless Sticky Cinnamon Bun Muffins: THESE LOOK GOOD. You can’t tell me a super moist, cinnamon bun muffin, with a healthy ingredient list doesn’t tingle your privates a little… I was able to make these without failure & they were a perfect sweet breakfast baked good, without all the extra ingredients. If you’re someone stuck on sweet, you’ll like these! Wafiq said he’s putting Nutella on top of his.
Double Chocolate Oatmeal Pancakes: Tested, tried, and approved! I’m not good at pancakes. They’re always black, yet under-cooked? These ones are delicious & honestly fail-free because I somehow managed to make them. They check all the recipe boxes & I’m probably going to end up making them every weekend for breakfast! Find something you can’t fail at, & stick to it.
6 Ingredient Vegan-Chocolate Scones: Yummy! I made this recipe as my first “treat” after following my strict diet. No weird reactions & oh so delicious food! Pretty much guilt-free. There’s no better combo than that my friends. You definitely have to like scones to enjoy this recipe as they’re a bit flour-y tasting, but I’m a major fan!
Simply Epic Homemade Flaxseed Bread: You have to like 2 things to like this recipe; bread + flax seed. I couldn’t help but be attracted to this Flaxseed Bread because it checks all my boxes AND it’s {faking} bread. I can get on board with that. Not to mention how simple it is? Yes please. I’ve made this one a few times & eat it w bites of Hu Chocolate on the side. YUM. This is a great option if you’re trying to avoid sugars for breakfast! I LOVE IT.
Sweet Potato Oats Waffles: This only thing on my list I haven’t made, but can’t wait to. I’m noticing sweet potatoes making the main ingredients list more & more often, I’m not complaining. They’re delicious, healthy, & I always have them on hand. How about this alternate waffle option? Looks good right?
How many of you guys saw my Scones recipe this weekend on Instagram? I made fucking scones with Rice milk rather than Nut milk and the dough stuck to my hand like clay. I’ve never cursed out loud to myself so much in my entire life. WHY WON’T THIS SHIT COME OFF MY FREAKING HANDS?! Even under running water it was work to remove. From now on, when baking, I’m 100% sticking to the recipe. Clearly I have no idea what’s going on with different ingredients. Like I said, baking is a whole new world to me.
