Breakfast Taco’s Are A Thing
Breakfast Taco’s are a staple breakfast menu item for Texan’s.
My first time visiting Texas I drove by a huge sign that read “BREAKFAST TACO’S”. I thought it sounded rather disgusting. Lunch food for breakfast? That particular restaurant actin a little cray cray.
Later to find “Breakfast Taco’s” were everywhere, and very norm & I love them.
The concept is super simple, but most of the world is missing out!
Tortilla + Breakfast fillings.
Basic varieties: Bean & Cheese / Potato, Egg & Cheese / Bacon, Egg & Cheese / Sausage, Egg, & Cheese
If you go to the awarded breakfast taco hot spots you’ll find varieties with everything –
Taco Deli: “The Otto: A house favorite! Organic refried black beans, bacon, avocado and Monterrey Jack Cheese”
Torchy’s Taco’s: “The Wrangler: Scrambled eggs & potatoes topped with smoked beef brisket & Jack Cheese, Served with Tomatillo Sauce”
Nowww you know why there are some Sunday morning’s I manage to stuff down three breakfast taco’s. They’re too good. TOO GOOD I TELL YOU!
There’s no need to get all extraordinary with your tacos, here’s a basic start. And you can grow from there.
Basic Breakfast. Taco’s.
3 cooked scrambled egg
1/4 cup shredded cheddar cheese
1 potato (Cooked – Either small cubes or shredded)
2 Small Tortillas
Salt
Pepper
Favorite Salsa
Directions: Warm your tortilla, best on a pan for just a couple seconds. Set tortilla on plate. Place potato, egg, then cheese on top of the tortilla in the amount you prefer. (This is not a burrito, go light on the fillings.) Top with a little salt & pepper + Salsa. Enjoy! (+ this recipe should make at least 2 tacos)
I know outside of Texas it can be hard to find a good salsa and especially a great tortilla.
(At one point I tried making homemade graham crackers in Dubai because I could no longer resist my cravings!)
So do what you can – make a salsa -> jalapeño, lime, salt, pepper, tomato, onion & cilantro. And if you can’t find a good tortilla, screw it (tortillas are fattening anyway.) Stack the ingredients in a bowl and eat a breakfast taco that way. YUM.
The best part of cooking at home is knowing what you’re eating. LOVE IT!
