Minnesota Eats & Deets | Fall 2018

Listen to me, you’re going to get used to seeing Minnesota more often because I’m planning on visiting… a lot.  Not only is it where I grew up, my family is there, it’s beautiful, has all the seasons, BUT the airline expense has significantly dropped, and I’m talking non-stop flights.  IF that doesn’t get you excited, you clearly have some exciting things going on & I can’t hate you for that.

Summer in Minnesota | 2018

Minnesota the beautiful! I’ll write about Minnesota every single time I visit because it means too much to me. I love that freaking state!  I haven’t lived there since I was 18 but still feel so connected.  I hear about people who lived in different places & barely have a connection to the place they were born, but that doesn’t apply to me.

It goes without saying, the best time to visit Minnesota is in the summer.  That’s the season Minnesota really shows off.  I’ll argue that Fall is just as special, with the wash of colors across the trees that you don’t get to see many other places.  And the blooming in Spring is also a season that won’t disappoint you.  The winter? Brutal at times, but even then, there’s something pretty to see.  The complete white out.  There’s tons of snow on the ground, in the trees, on the streets.  Everything is quiet.  Twinkling.

Not Your Average Weeknight: One-Pan Wild Rice & Kale Dinner

I made the recipe below 3 days in a row – totally different than what I’m used to cooking & I couldn’t get enough.  I had little faith the dish would turn out as I was throwing in the ingredients, and I’m not a huge kale fan, but to my surprise it worked perfectly.  And it was super easy, quick, and affordable.
