Say Goodbye to Ready-to-Bake Cookies & Hello to Your Homemade Version

Did You Know? The largest cookie weighed 40,000lbs with 101ft diameter. Immaculate Baking Company had to surround the whole creation with heaters (more than 20 altogether) to get the sheet to baking temperature.  As for the cookie dough, it was made from 40,000 pounds of ingredients. ( v i a )


I was planning an entire post on my favorite online clothing shops but had a craving for cookies that I couldn’t resist, so the clothes will have to wait.  My mind is too distracted to talk about sequins & sales (<< very rare).

My ultimate guilty pleasure: Cookies.  I RARELY find myself saying no to a cookie.  Other desserts don’t typically tempt me, but a cookie & I can’t walk away.   The gold mine was when I figured out how easy/delicious ready to bake cookies were.  Gooey & worth every extra pound to the hips.

Because I know majority of the ingredients in ready-to-bake cookies are shit, I stopped buying them. But the cookie craving could not be curbed.  I tried buying the “organic”,  ready-to-bake cookies or gluten-free or packaged cookies that had a little better of an ingredient list, but they were simply not as good, no way around it.

I decided to hunt down a perfect cookie dough that I could easily make myself.  And that would NOT go flat. Taste like ready-to-bake but be homemade.

I would have my own ready to bake cookies with ingredients that I chose myself.  No more mysterious maltodextrin, cellulose gum, xanthan, high fructose corn syrup, or other bullshit.  ONLY ingredients of my choosing.

At the very least, I can pick my own poison.

The recipe from Averie Cooks: Softbatch Cream Cheese Chocolate-Chocolate Chip Cookies is the bees knees.

The hard part for me was always finding a recipe I could make myself that was a NO FAIL win & this recipe is the golden ticket.

I roll the cookies into super small balls & freeze them in separate containers of about 8.  That way I can easily grab a pack of balls out of the freezer & stick it in the refrigerator for my own homemade, ready-to-bake cookies.

Also, as I’m practicing portion control, really small cookies will do the trick.

I should note, I’m not a huge chocolate fan but these cookies are delicious & completely satisfying.  For chocolate lovers or non-chocolate lovers.

{Full disclosure, Wafiq was helping me roll balls the other day & they were the size of my hand.  To each their own.}

3 Easy, Delicious, Healthy Salad Combinations

I eat salad every day.

The interesting part is, I never order salad at a restaurant. I love making them at home.  Mixing all my favorite foods in one dish is one of the best creations of all time, and I’ve mastered some favorites.

I go hard on these 3 salad combo’s but feel free to mix them up in new, different ways.  That’s how I never get sick of salad!

No need to be fancy or time consuming to be delicious.  I mix mine fresh for a quick lunch almost every single day.

Salad Combo #1

Arugula – 2 Large handfuls

Cilantro – 1 Handful chopped

Pinto Beans – 1/4 Cup drained & rinsed

Cheddar Cheese – 2 Tbls cut into tiny cubes

Onion – 1/2 Cup sliced thin

Garlic – 1 big clove diced

S&P – to your tasting

Lime – Juice of 1 Lime

Olive Oil – 1-2 Tbls

Directions: Throw all together in large bow & toss


Salad Combo #2 

Cabbage – 2 Cups sliced thin

Basil – 3/4 Cup chopped

Feta Cheese – 2 Tbls crumbled

Avacado – 1 avocado chopped

Celery – 2 stalks sliced

Oilve Oil – 1-2 Tbls

Garlic – 1 big clove diced

Lime – Juice of 1 lime

S&P – to your tasting

Directions: Throw all together in large bowl & toss


 Salad Combo #3

Mixed Greens – 2 large handfuls

Black Beans – 1/4 Cup drained & rinsed

Rice – 1/4 Cup cooked

Cheddar Cheese – 2 Tbls cut into tiny cubes

Cilantro – 1 bunch chopped

Lime – Juice of 1 lime

Olive Oil – 1-2 Tbls

Garlic – 1 large clove diced

S&P – to your tasting

Directions: Throw all together in large bowl & toss

To summarize: I have leaves, beans, cheese, salt, pepper, garlic, olive oil, limes, avocado, & celery or carrots on hand at all times.  Makes life SO easy.    And the best part of making salads at home is that you can add more (or less) of ingredients you really like.  When I make a salad for Wafiq I double the beans, onions, and cheese.  When I make salads for me I go heavy on the leaves, lime juice & avocados.  We’re so lucky to have a kitchen w/so many wonderful ingredients.

Ps.  The new fall TV series lineup has me anxious. I have them recorded & have been waiting to catch up – see which ones are worthy of my time now that I finished The American’s.  (Did you know the lead actors in The American’s are actually married in real life?  Doesn’t that make the series even better?!?)

3 Easy, Healthy & Delicious Dip Recipes

My favorite part of any meal – the dips!

No meal is complete without an extra kick, that bonus flavor.  Growing up, 7 layer dip w/chips ALL DAY.  Sour cream. Salsa.  Ranch.  Garlic Butter. Cheese. Marinara. Buffalo Sauce.   Shit, really anything dip-able.

3-Easy-Healthy-Dips

Well these days I’m a little more aware of what I’m eating, still a dip lover, but not so much the garlic butter from the Papa John’s pizza boxes style anymore.

And the best part, these dips are easy peasy, healthy & you can make them at home so you know what you’re eating.  (My favorite thing.)  Plus, you can make these dips anywhere – thanks gosh because homemade guacamole saved me from my Mexican food cravings whilst in Dubai.  And now homemade hummus is doing the same while here in the States.  OUI OUI.

Here you go, my 3 favorite DIPS to accompany any food:

Guacamole

Easy-Healthy-Dips-Guacamole

(I’m on a guacamole bender from the Cajun Shrimp Guacamole Bites recipe, I might surrender my own recipe for this one.  And anyone that’s tasted it agrees something’s different & damn delicious – Thanks Joyful Healthy Eats!!  )

4 small avocados

½ cup cilantro

juice of 1 lime (about 2-3 tablespoons)

1½ tablespoons red wine vinegar

½ teaspoon red pepper flakes

salt to taste

Directions: Add avocado, cilantro, lime juice, red wine vinegar, red pepper flakes, and salt to a food processor or blender. Lightly pulse until the mixture is smooth.

+ Accompany with: Chips, Carrots, Tacos, Shrimp, Potatoes, Chicken, Burgers, Salad, Sandwiches

Plain Yogurt:

3-Easy-Healthy-Dips Yogurt

(Best discovery… ever.  If you aren’t already using plain yogurt in replacement of sour cream you are major MISSING OUT!  Plain Yogurt is good for you so throw out your Sour Cream, be gone with it already!)

Yogurt

Flax seeds Or Salsa

Directions: Mix together either Yogurt + Flax Seeds or Yogurt + Salsa. Plain Yogurt is your new best friend.

+ Accompany with: Chips, Tacos, Potato, Rice Dishes, mix in your mashed potatoes

Hummus:

3-Easy-Healthy-Dips-Hummus

(Thank you sweet baby Jesus I started making this at home.  I was completely over spending so much $$$$$ on hummus OR hummus filled w/weird mystery ingredients I couldn’t pronounce.  Fed up!  I want chick peas mashed up w/some damn Tahini! MmMmMm)

1 Can organic Chickpeas (Rinsed & Drained)

2 Tbls Tahini

Juice of 1 Lime

1 Garlic Clove

2 tsp Cumin

1/2 tsp Cayenne Pepper

1/2 tsp Onion Powder

1 tsp Garlic Salt

1/4 C. Olive Oil

Directions:  Mix all the ingredients in a little blender. Blend for 1-2 minutes or until everything is smooth.  (Add more olive oil if you need it smoother.) Transfer to a container. Make a small dip in the center with the back of a spoon and drizzle extra olive oil over the top. Pro.

+Accompany with: chicken, carrots, celery, broccoli, rice dishes, salads, olives, bread, crackers

There you go – my 1, 2, 3 of adult dipping.  I have at least one of these three items ready to roll in my refrigerator at all times.

You have to change up those bland-ish weekday meals w/added flavor, so give these a try!  Let me know if you’re a major dipper & what’s a go-to for your daily meals.

I Finally Bought Cravings, By Chrissy Teigen & This Is What I Think

Slayyyyy bae slay! The cookbook of all cookbooks.  I’ve had my eye on Chrissy Teigen’s cookbook Cravings for a long time & finally bought it earlier this month.

Guys, it’s the shit.  This review is going to the results, real quick.

I READ the entire book before cooking anything in it.  Are Chrissy & John hot as F*** or what?  (I say Chrissy and John as if we’re on first name basis.)

Normally, I’m anti cookbooks because, Pinterest.  BUT I love Chrissy Teigen so I felt obligated, plus her snapchats of recipes makes me really hungry.

The book (we’re calling it a book, because there’s so much more than recipes) is packed with humor, reasons why she loves each recipe, fantastic pictures that I’m super envious of, and my favorite – THE RECIPES!

I easily get bored w/cooking, hence my mystery ingredient challenge. Basic recipes kill me over a period of time.  If you don’t enjoy cooking, perhaps you’re bored with WHAT you’re cooking.  That happens to me, then I start eating out. Which, blah.

This book is creative, the ingredients are across the board & it incorporates several cultural mixes. Bingo.

Chrissy-Teigen-Cravings-Review(3)

We cooked Chrissy’s Mac & Cheese with Cheesy Garlic Bread Crumbs, BTI (Better Than Ina’s) Roast Chicken And Vegetables, & the Dutch Baby Pancake.

The roast chicken calls for 23 cloves of garlic.  23 cloves….   WOULD I EVER CHOSE A DIFFERENT RECIPE?!  It’s as if the recipe was created for me, anyone who has balls to write 23 cloves of garlic in their ingredient list is a winner to me.

The Mac & Cheese was so healthy, I ate the entire pan.  (Not healthy, so much cheese, soooo much cheese!)

We made the Dutch Baby Pancake the morning after the food coma for Wafiq. But I ate half.  Fantastic.

Chrissy-Teigen-Cravings-Review(2)

Overall, almost every recipe appears tempting.  I’m planning on the Chunky Creamy Mushroom Soup this weekend.

I noticed some of recipes can look a little intimidating w/unusual ingredients & methods of cooking, however that’s exactly what I need when I’m buying a cookbook – different. Do not be afraid!  And she does an excellent job of explaining each step & what you can do to make the meal an overall success.

I highly recommend it.

If you don’t enjoy cooking, buy this book and flip to a random page – then go for it! Cooking new foods might shine light on your kitchen counters.

If you love cooking, you’ll appreciate the recipes in the book – very different.

And if you want to read a funny book about food w/hot pictures – here’s your answer.

This won’t disappoint, and having Chrissy’s face on the cover doesn’t make for a bad coffee table book either.

Alright, I’ll report back on twitter how my Chunky Creamy Mushroom Soup turns out & whether or not mushroom haters approve.. aka Wafiq.

 Tonight, I’m hating myself for getting into this HBO series, The Night Of.  WHY?! Why watch such tense TV series? Who creates these??  I overkilled New Girl with Wafiq, but I’ll strategize a plan to get it back on the TV ASAP!

Olympic Viewing Party Menu

Pinterest got the best of me.  Last Friday I decided to throw an Olympic Opening Ceremony Party… with Myself, Wafiq and Bernice.  I found a few excellent looking party dishes + I was super excited for the Olympics.

I had a long list of recipes ready to go in an email titled: “Olympics Party Food” to Wafiq’s inbox.  I think that’s when he started to be concerned.  First of all, I never email Wafiq.  I don’t know what prompted that action. And second, I’m not fully confident Wafiq knew about the Olympics.  Or about cooking for them.

Wafiq followed up with a phone call & there was a moment of silence after he asked who was going: Bernice, Himself, and Me.

Shrimp, tuna, olives, buratta, wine, bread, prosciutto – for me, Bernice & Wafiq. I even considered decorations.

I was/am totally comfortable with that.  But Wafiq ended up inviting the neighbors to truly fulfill my Olympic Opening Ceremony Party goals. (Thank you neighbors.)

Anyways, I spent waaay too much time on Pinterest & the results proved it. These three recipes + a glass or two of wine made for an excellent Olympic party. Whether you have 2 humans + 1 dog or 10 people, you have to make it work.  Perhaps this weekend?

1. Cajun Shrimp Guacamole Bites – from Joyful Healthy Eats 

Ingredients

1 sweet potato, sliced in ¼” slices

2 Tbls olive oil

salt to season

Chipotle Shrimp:

1lb. large raw shrimp, peel and deveined

½ teaspoon smoked paprika

½ teaspoon ground cumin

½ teaspoon sea salt

¼ teaspoon chipotle chili powder

1 tablespoon olive oil

Guacamole:

4 small avocados

½ cup cilantro

juice of 1 lime (about 2-3 tablespoons)

1½ tablespoons red wine vinegar

½ teaspoon red pepper flakes

salt to taste

Instructions:

  1. Preheat oven to 425.

  2. Cover bottom of baking sheet with tin foil. Add 1 tablespoon of olive to tin foil and using a brush, spread the olive oil over the entire pan so it is coated. Place the sweet potato slices on the prepared baking sheet.

  3. Pour remaining tablespoon of olive oil into a small dish, using a brush, brush the tops of the sweet potato slices with olive oil. Lightly season with salt.

  4. Bake in oven for 10 minutes.

  5. Remove the baking sheet from the oven and gently flip the sweet potatoes slices over using a pair of tongs. Place back in oven and bake an additional 5-7 minutes. Remove and let sit.

  6. To prepare the Guacamole: Add avocado, cilantro, lime juice, red wine vinegar, red pepper flakes, and salt to a food processor or blender. Lightly pulse until the mixture is smooth. Set aside.

  7. To prepare the Chipotle Shrimp: In a small bowl, add shrimp, smoked paprika, ground cumin, sea salt, and chipotle chili powder. Toss the shrimp to coat in the seasoning blend.

  8. Heat a large skillet to medium high heat. Add olive oil to the pan and then place the shrimp. Cook shrimp for 2-3 minutes per side.

  9. Assemble the bites. Top each sweet potato slice with a dollop of guacamole, one shrimp, and garnish with fresh cilantro. Serve

 


2. Prosciutto Crostini with Burrata and Lemon Honey Drizzle from The Charming Detroiter 

Ingredients

1 baguette, sliced on a diagonal into at least 12 crostini

Olive oil

½ lemon, juiced

¼ cup honey

Salt

Pepper

4 slices prosciutto, torn into large pieces

8 oz. burrata, sliced

Microgreens, for garnish

Instructions

  1. Heat broiler to high. Arrange baguette slices on a baking sheet. Drizzle with olive oil and toast in the oven for 2-3 minutes, until golden brown.

  2. While bread is toasting, whisk together lemon juice and honey in a small dish until combined. Season with a dash of salt and pepper, whisking to combine.

  3. After bread has toasted, remove from baking sheet. Add prosciutto to the baking sheet and toast under the broiler for 2-3 minutes, until crispy.

  4. To assemble, place one slice of burrata on each crostini. Top with 1-2 pieces of crispy prosciutto and micrograms. Drizzle with honey lemon sauce and serve. Enjoy!

 


3. Fresh Ahi Tina Cakesfrom Superman Cooks 

Ingredients

8 oz fresh ahi tuna

½ C cracker crumbs (we used a club crackers )

1 tbsp old bay seafood seasoning

Pinch of salt

Pinch of pepper

1 egg

Cilantro

Fresh lime

Olive oil

For the sauce:

¼ c cocktail sauce

½ c mayonnaise

Tsp fresh lime juice

Instructions

  1. Dice tuna into ¼” pieces and place in a mixing bowl

  2. Squeeze one fresh lime wedge onto tuna

  3. Salt and pepper tuna, and mix in old bay seasoning

  4. Crush crackers to an oatmeal consistency (you want some larger pieces)

  5. In a separate bowl, scramble the egg and add to tuna.

  6. Combine cracker crumbs with tuna and mix together (it will look wet, don’t worry the crackers will absorb the liquid).

  7. Cover and refrigerate for at least 10 minutes

  8. Heat a sauté pan over medium high and add tbsp olive oil

  9. Divide tuna mixture into 3 equal parts and form into balls and lightly smash to flatten top and bottom

  10. Place in sauté pan and cook over medium high heat for 2 minutes, turn over and cook for another 2 minutes.

  11. Serve with fresh lime and drizzle with tuna sauce

SO easy! I organized & made everything ready in less than an hour.

I added wine, water, olives, & chips to the menu.  I laugh at myself for throwing this “party” without any guests, but it turned out wonderfully.  Commitment I tell you!

I’m still all in, watching the Olympics every single evening.  Anyone else loving them?  Such a change from that junk TV – Bachelor in Paradise (Yes I’m recording it & will be catching up soon).

Relax & Enjoy – A Classic Margarita

My drink of choice: A classic Margarita.

 A-classic-Margarita-

Cold, delicious, simple & a refreshing treat to the weekend.

Since making my own classic margarita’s at home I can’t stand ordering one that’s made incorrectly.  I’m assuming it’s either cheap tequila, added sugar, fakey fake premade mix, or an extra cheap ass ingredient thrown in as filler.  Who knows!

I always ask for my Margarita with no added sugar and that usually forces the bartender to mix a fresh drink, w/fresh ingredients.  And surprisingly, the bartenders never seem bothered – more appreciative that they get to use their mixology skills to create a delicious, fresh margarita.  Love it!

 Classic Margarita

3 Oz Tequila

2 Oz Triple Sec

1 Oz Lime Juice

Splash of Orange Juice

 Directions: Mix in a cocktail shaker w/ice & pour over ice.  (*I go light on the tequila & heavy on the lime + orange juice)

For Wafiq’s Birthday, we mixed a large batch and put it in a water bottle for people to pour over ice.  It was a big hit!  We were at the pool so something cold & refreshing w/out a ton of added sugar was the perfect touch.

And this tequila is my favorite. One of my most memorable nights is drinking it w/cheese & crackers at the house we stayed in while living in Los Angeles.  The owners bought it & invited us in – great conversations and memories tied to this bottle.  Perfect little buzz w/out a hangover too.  You get it.

Mix it up & pour yourself a glass! Unwind, relax, & enjoy.

Glinda’s Healing Garlic Salsa

Garlic is my best friend.  It has special healing powers & knowing that makes me feel like Glinda the good witch.

Like I’ve mentioned, in order to see the benefits of garlic as I have, you have to eat A TON of it.  Healing powers don’t come easily.  And whenever I tell someone to eat bulbs of garlic they cringe & ask how.

This recipe is the easiest way I’ve found to consume large amounts of garlic:

Glinda’s Garlic Salsa

2 small Tomatoes Diced super small

Juice of 2 Lemons

Juice of 2 Limes

 1/2 White Onion Diced super small

4 Cloves of Garlic Diced

Pepper

Directions: Mix all ingredients together.  Enjoy!

At least one dinner a week I’ll mix this Glinda’s Garlic Salsa together & serve w/food.   (Goes BEST w/white basmati rice.)

If I was sick, I would be adding 10x the amount of garlic.

But for your average, garlic consuming days, this is a great amount.  I always use as much garlic as I can handle – with this recipe & any other recipe.  Push garlic to my limits!

Start making this a staple in your house & keep those sicknesses aaaa way!

Unknown Ingredient Challenge: Kelp Noodles

One of my favorite places in the world is –> THE GROCERY STORE!!!!!!!!

There are so many interesting ingredients in there, how do you not spend 3 hours inside each time you have to pick up eggs?! (<– Wafiq hates me)

I’m always down to try new foods.

Some ingredients I’ve happily added to my diet that I didn’t previously understand:  Amino Liquids, Dates, lentils, tahini, sesame seed oil, fresh ginger, saffron…

So, last weekend Wafiq & I decided to walk into the grocery store, pick something out that we haven’t seen before, and cook it!    (I’ve been wanting to do this for a long time.)

Our target was to find a main ingredient.

We landed on: KELP NOODLES

There were only 2 packages left, we considered that a good sign & went for it.  Since I didn’t know what Kelp was, much less how to cook it, I checked the back of the package for a recipe and felt confident in my findings.

Secret-Ingredient-Kelp-Noodle(6)

Kelp Noodle Chicken Stir Fry w/ a MBM Twist

1 Package Kelp Noodles

1/2 C. diced chicken

1/2 C. sliced onion

3 Tbls Coconut Oil

1/2 C. Broccoli

1 Red Bell Pepper, Thinly Sliced

4+ Garlic Cloves Minced

2 tsp. Liquid Amino’s

2 tsp.  Sesame Seed Oil

Salt & Pepper

Sesame Seeds (sprinkle on top of finished dish)

Lime wedges

Directions: Saute garlic in coconut oil. Add chicken & veggies. Saute until chicken is cooked.  Then add Kelp Noodles, Amino Liquids & sesame seed oil.  Stir until noodles soften, add salt and pepper to taste.  Serve with (tons) of lime juice and sprinkled w/sesame seeds. (YUMMMM!)

Kelp noodles for the win!  This recipe was DELICIOUS!

I was a bit scared at first because the noodles looked like octopus legs or a slimy worm?  (CLEAR?!)  But it wasn’t slimy… and it wasn’t a worm.

Kelp Noodles have a little crunch which made them a fantastic alternative to regular noodles or rice in a stir fry.  They absolutely taste nothing like seaweed, they barely have a taste, and they are not sticky!

Ok, so of course I hit up Google Search (aka: Pinterest) to see what I was eating.

First, Kelp is a sea vegetable. Meaning, it’s seaweed.

{I thought this would freak Wafiq out, but it didn’t.  I think because the meal tasted so good.}

This is what I learned:  ( v i a / v i a )  

  •  Mostly used in Korean dishes

  • Contains NO fat, cholesterol, protein or sugar & they’re gluten free

  • Can arguably be considered RAW, depending on how they’re prepared

  • Contains calcium & iron

  • Like most seafood, Kelp noodles contains Iodine which helps with thyroid & metabolism function!

For a completely random find I’m overly impressed!  And the best part, you can buy them on Amazon &&& it’s Prime.  Hello Kelp Noodles!  [I was reading a lot of people are having trouble finding them in their local stores, so per usual – Amazon to the rescue.]

++++ they’re super affordable.

Not only did I love how easy this particular package was to throw into a stir fry + their nutritional bonuses (goodbye carb filled noodles & rice), I’m also excited to incorporate seaweed into my diet for the iodine benefits.  I’ve been reading the benefits of Iodine & many people don’t get enough —

I’m anxious to continue my relationship with Kelp Noodles.

(I’ll do a little update w/some other uses & benefits after we hit 3rd base together.)

YAY! This was such a fun time & I definitely want to do the mystery grocery ingredient again soon.  I feel like it was an activity that mixed up routine, changed the menu, & assisted in learning about a new ingredient + it’s benefits.

Breakfast Taco’s Are A Thing

Breakfast Taco’s are a staple breakfast menu item for Texan’s.

 Breakfast-Taco-Recipe, Tex-Mex, Easy & Quick

My first time visiting Texas I drove by a huge sign that read “BREAKFAST TACO’S”.  I thought it sounded rather disgusting.  Lunch food for breakfast?  That particular restaurant actin a little cray cray.

Later to find “Breakfast Taco’s” were everywhere, and very norm & I love them.

+ Added cilantro, tomato & onion

The concept is super simple, but most of the world is missing out!

Tortilla + Breakfast fillings.

Basic varieties:  Bean & Cheese / Potato, Egg & Cheese / Bacon, Egg & Cheese / Sausage, Egg, & Cheese

If you go to the awarded breakfast taco hot spots you’ll find varieties with everything –

Taco Deli: “The Otto: A house favorite! Organic refried black beans, bacon, avocado and Monterrey Jack Cheese”

Torchy’s Taco’s: “The Wrangler: Scrambled eggs & potatoes topped with smoked beef brisket & Jack Cheese, Served with Tomatillo Sauce”

Nowww you know why there are some Sunday morning’s I manage to stuff down three breakfast taco’s.  They’re too good. TOO GOOD I TELL YOU!

There’s no need to get all extraordinary with your tacos, here’s a basic start. And you can grow from there.

Breakfast-Taco-Recipe, Tex-Mex, Easy & Quick

+ Added Feta & all natural sausage

Basic Breakfast. Taco’s.

3 cooked scrambled egg

1/4 cup shredded cheddar cheese

1 potato (Cooked – Either small cubes or shredded)

2 Small Tortillas

Salt

Pepper

Favorite Salsa

Directions: Warm your tortilla, best on a pan for just a couple seconds. Set tortilla on plate. Place potato, egg, then cheese on top of the tortilla in the amount you prefer.  (This is not a burrito, go light on the fillings.)  Top with a little salt & pepper + Salsa. Enjoy! (+ this recipe should make at least 2 tacos)

I know outside of Texas it can be hard to find a good salsa and especially a great tortilla.

(At one point I tried making homemade graham crackers in Dubai because I could no longer resist my cravings!)

So do what you can – make a salsa -> jalapeño, lime, salt, pepper, tomato, onion & cilantro.  And if you can’t find a good tortilla, screw it (tortillas are fattening anyway.)  Stack the ingredients in a bowl and eat a breakfast taco that way. YUM.

The best part of cooking at home is knowing what you’re eating.  LOVE IT!

Sticking with BBQ & summery themes –> today I’m sharing my SUPER complex burger recipe. (I kid I kid)

Basically… This is the most basic recipe of all time.

I’m sharing the Basic Burger recipe because I see people F-up their burger meat all the time & it drives me cray cray.

I went through a phase of burger making – I would throw in all kinds of ingredients: Bread crumbs, spices, peppers, mozzarella cheese, cheddar cheese, gouda, eggs, onions, garlic, parsley…

I also tried every ‘Best’ burger recipe I could find.

And I totally understand why a chef would be proud of their extravagant burger recipe, much more intriguing than a basic burger.

But the deal is, sometimes less is actually more.  And with burger meat, that IS the case.

Don’t be in denial like I was for far too long.  Burgers really are this simple.

A game changer in the burger department: simply add less.  Letttt it gooooo, let it goooooo!  Trust me.

MBM’S BASIC BURGER RECIPE

Grass Fed Ground Beef

Salt

Pepper

Directions:

Mix all ingredients to the proportions of your liking (*I go heavy on the S & P) -> Form into a patty -> grill!

Khalas! That’s it folks.

I believe basic is best when it comes to actual toppings as well.  Bun, lettuce, tomato, onions, cheese, pickles, ketchup mustard.

I have a little more understanding for adding different toppings though… Just don’t mess with the meat!

I throw my burger meat on top of a salad that includes: Romaine, cilantro, onion, cheddar, tomatoes, olive oil, lime, salt, pepper & PICKLES! (I love pickles, I chop up a spear & top it over the salad)

P.S. The biggest secret weapon in the kitchen is this badass grill.  Not lying – it was the first thing I bought for my apartment when I moved.  Already decided to pack it in my precious bag space next time I make a move.

Adding nothing to the beef is too meaty, and adding too many ingredients is just blah…

Ground Beef + Salt + Pepper = Perfection

Let me know if I’m completely off my rocker with this, but I’m feeling confident.

Any other super basic recipes that just shouldn’t be messed with?  I know they’re out there…

Off to catch up on The Bachelorette! Story of my life this season, always an episode behind. I’ll have to work diligently to make up for it.
