 Peanut Butter and Veggie Curry

You know I hate boring or bland.   I love fresh, flavorful & different.  This is it!    I’m not sure if I’ve mentioned this before, but I request that you do NOT allow yourself to be afraid of food.  Spices, new ingredients, mixing flavors are all wonderful! Let yourself try them.  Indian food & curry are stereotyped to making your stomach boil but I would argue that, as it’s never happened to me.  I think it depends who makes your curry & what you’re actually eating. (McDonalds makes my stomach boil.)

Spices are the cream of the crop.  They add so much to any dish.  Be familiar with lemons.  Cumin.  The real flavor of Salt & Pepper individually.  GARLIC. Pine Nuts.  LOL!  I just loooooooooove food so f-ing much.  I can’t stand picky eaters, open your palette & taste food of the beautiful mother earth!  There’s nothing better.

Veggies & Lentils in Peanut Sauce by Vegan Richa

I added chicken.  I slice the chicken, cook it on the stove in a little coconut oil w/ salt + pepper, then throw it in when I mix everything together.  The only veggies I use are 2 onions, 2 red bell peppers, and a handful of spinach.  With a ton of lime juice & rice to serve.
